Harvesting Dwarf Beans
When ready: Pods snap crisply when bent. Seeds inside are small and immature (pods not lumpy). Pods are full-length for variety but still tender.
How to harvest: Hold stem with one hand, pull pod gently with other. Or use scissors. Harvest every 2-3 days.
Storing and preserving dwarf beans
How to keep it
- Freezing. Top and tail beans. Blanch in boiling water for 3 minutes. Ice bath for 3 minutes. Drain, pat dry, flash-freeze on tray, transfer to freezer bags. Keeps: 12 months.
- Dehydrating. Blanch 3 minutes, drain. Arrange on dehydrator trays. Dry at 60C for 8-14 hours until brittle. Store in airtight jars. Rehydrate in water for 30 minutes before use. Keeps: 12 months.
- Fermented (Lacto-fermented Beans). Trim beans to fit jars. Pack tightly with garlic and dill. Dissolve 2 tbsp salt in 1L water. Pour brine over beans ensuring complete submersion. Weight down. Ferment at room temperature 5-7 days until sour. Refrigerate. Keeps: 3-6 months refrigerated.
- Pickling (Dilly Beans). Pack whole trimmed beans vertically into sterilised jars with dill, garlic, chilli. Pour hot vinegar brine (500ml vinegar, 500ml water, 2 tbsp salt). Process 10 minutes in boiling water bath. Keeps: 12 months.
