- Whole Storage (curing). Cure in sun 7-10 days. Store cool (15-20C), dry, ventilated. Don't stack. Keeps: 3-6 months (Butternut up to 12 months).
- Freezing. Peel, deseed, cut chunks. Steam or roast until tender. Cool and freeze in portions. Or puree and freeze. Keeps: 12 months.
- Dehydrating. Peel, deseed, slice thin (3-5mm). Steam blanch 3 min. Dehydrate 55C for 8-12 hours. Keeps: 12 months.
- Pumpkin Soup (freeze). Roast pumpkin with onion and garlic. Blend with stock. Cool and freeze in portions. Keeps: 6 months frozen.
