Preserving the harvest

Tested pressure canning recipes, one for every glut

Pressure canning turns a glut of tomatoes, beans, corn or pumpkin into a shelf of jars that keep for a year without a freezer. It is also the one preserving method where a guess can make you sick. So we did not write our own recipes. Every one below comes from published home canning guidelines, written up in Australian units: mL jars, kilograms, millimetres and kPa.

  • 121individual tested recipes
  • 35crops with a guide
  • 7food groups
  • 2,192pressure figures by altitude

How it works

Pick a crop, open the tested recipe, can it the way it says

The times and pressures come from published home canning guidelines, not from us. The conversion to the units on your kitchen bench is ours, so every pressure also shows the original psi. Always follow the manual for your own pressure canner, and if a figure here ever differs from it, go with the manual.

  1. Pick a crop

Use the crop list below or open any veggie guide and press Pressure Canning in the contents strip. Tomato, beans, corn, pumpkin, carrots and 30 more carry at least one tested recipe.

  2. Find the recipe

Every recipe card names the crop it is for and how many pressure figures sit behind it. Jar sizes are 250 mL, 500 mL and 1 L, the ones on the supermarket shelf.

  3. Can it with the right pressure

Members on a paid plan open the full recipe on the crop guide: ingredients in metric, preparation, the pressure for a weighted and a dial gauge by altitude band in kPa, with psi beside it for the gauge on your canner, yield, storage and the safety notes.

Everyone, no account needed

The whole index

  • All the recipes, grouped by category and by crop.
  • Which crop each one is for, and the crop guide it lives on.
  • How many altitude bands each recipe carries.
  • Three picks a day on the news page, a different three tomorrow.

The full recipe details on the crop guide

  • Jar sizes, process time, headspace and pack method.
  • Pressure for a weighted gauge and a dial gauge, by altitude band, in kPa and psi.
  • Ingredients in metric, the preparation steps and the expected yield.
  • Storage, how long the jars keep, the safety notes, the substitutions the recipe forbids and the variations it allows.

A few recipes give a process time but no pressure figure. We show those with the time only and say so, rather than fill the gap ourselves.

Missing a crop?

Some recipes are not tied to a veggie guide yet, meat, fish, stock and a few fruit among them. They are in the set and the guide pages for those will follow. If you want a tested recipe for a crop we have missed, tell us and the GardenBuddy.au team will go looking for one.

Your recipe

Got a pressure canning recipe of your own?

Send it in. The GardenBuddy.au team reads every one and checks it against the tested times and pressures before it goes anywhere near the site. Metric please: mL jars, grams, millimetres and kPa. Nothing you send is shown to anyone until we have looked at it. Once we are happy with it, it goes up under From the community with your first name, and the full recipe joins the members’ set.
